Sometimes I want something sweet, but I also want it to actually hold me over for more than five minutes. These almond butter protein bites are my answer to that. They’re soft, a little chewy, just sweet enough, and the mini chocolate chips give them that cookie-dough feel without turning snack time into dessert.
They also take about 10 minutes to throw together, there’s no baking involved, and you can keep a batch in the fridge or freezer for those moments when you’re wandering around the kitchen looking for something. You know the ones. 😂

Ingredients
1 cup old-fashioned rolled oats
½ cup creamy almond butter
⅓ cup vanilla protein powder
¼ cup pure maple syrup or honey
1 teaspoon vanilla extract
½ teaspoon cinnamon
Pinch of sea salt
2–4 tablespoons unsweetened almond milk, if needed
¼ cup mini chocolate chips
Instructions
Add the oats, protein powder, cinnamon, and sea salt to a medium bowl and stir to combine.
Add the almond butter, maple syrup or honey, and vanilla. Stir until a thick dough begins to form.
If the mixture is too dry, add almond milk one tablespoon at a time until the dough is soft but firm enough to roll. Depending on your almond butter and protein powder, you may not need any at all.
Fold in the mini chocolate chips.
Scoop about one tablespoon of the mixture at a time and roll it between your hands to form a ball.
Place the protein bites on a parchment-lined plate or baking sheet.
Refrigerate for about 30 minutes, or until firm.
Enjoy straight from the fridge, or pop them in the freezer if you like them a little firmer and chewier.

Cinnamon Roll: Leave out the chocolate chips and add a little extra cinnamon.
Peanut Butter: Swap the almond butter for creamy peanut butter.
Extra Crunch: Use crunchy almond butter or add a small handful of finely chopped almonds.
Sweeter Bites: Add a touch more maple syrup or honey if your protein powder isn’t very sweet.
Too Sticky? Add a little more oats or protein powder.
