Why You'll Love These Crispy Ranch Chickpeas

Sometimes I just want something crunchy and salty. Not a shake. Not another sweet protein snack. Something I can grab by the handful when I’m sitting at my desk or wandering into the kitchen looking for a snack. 😂

These crispy ranch chickpeas are perfect for that. They’re made with simple pantry ingredients, have a little plant-based protein and fiber, and that ranch seasoning gives them plenty of flavor without needing a packet of anything.

They’re also ridiculously easy. Drain, dry, season, roast. That’s pretty much it.

Prep Time: 10 minutes

Cook Time: 35–45 minutes

Total Time: 45–55 minutes

Servings: 4

Ingredients

- 1 can (15 ounces) chickpeas

- 1 tablespoon olive oil

- ½ teaspoon dried dill

- ½ teaspoon dried parsley

- ½ teaspoon garlic powder

- ½ teaspoon onion powder

- ¼ teaspoon salt

- ¼ teaspoon black pepper

- ⅛ teaspoon paprika, optional

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

  2. Drain and rinse the chickpeas well. Spread them onto a clean kitchen towel or paper towels and pat them really dry. The drier they are, the crispier they’ll get.

  3. If some of the loose skins come off while you’re drying them, go ahead and discard them. You don’t have to peel every chickpea.

  4. Place the dried chickpeas in a bowl and toss with the olive oil until lightly coated.

  5. Add the dill, parsley, garlic powder, onion powder, salt, pepper, and paprika. Toss again until everything is evenly coated.

  6. Spread the chickpeas onto the prepared baking sheet in a single layer.

  7. Roast for 35–45 minutes, shaking or stirring the pan about halfway through. Start checking them around 30 minutes since ovens vary.

  8. When they’re golden and crispy, remove them from the oven and let them cool on the baking sheet. They’ll crisp up a little more as they cool.

Tips & Variations

  • Get them really dry: This is probably the biggest trick to crispy chickpeas. Extra moisture = softer chickpeas.

  • Extra Ranchy: Once they come out of the oven, sprinkle on another little pinch of dill, garlic powder, and onion powder while they’re still warm.

  • Spicy Ranch: Add a pinch of cayenne or crushed red pepper.

  • Smoky Ranch: Add an extra ¼ teaspoon smoked paprika.

  • Garlic Lover: Bump the garlic powder up to ¾ teaspoon.

  • Air Fryer: Cook at 390°F for about 12–16 minutes, shaking the basket every few minutes and watching closely toward the end.

  • For salads: Leave them a little less seasoned and use them in place of croutons for some extra crunch.

Every oven—and every can of chickpeas—is a little different, so use the cooking time as a guide. You’re looking for chickpeas that are dry, golden, and crunchy rather than just browned on the outside.

Storage

Room Temperature: Let the chickpeas cool completely, then store them in a loosely covered container at room temperature for about 2–3 days. An airtight container can sometimes trap moisture and make them soften faster.

If they lose some of their crunch, pop them back into a 350°F oven for 5–10 minutes to crisp them up again.

Around My Table...

I am definitely a crunchy-snack person. 😂 Give me something salty that I can mindlessly munch on while I’m working and I’m happy.

The problem is that those are also the snacks that can disappear REAL fast when I’m sitting at my computer. You know when you reach into the bag and suddenly realize there’s basically nothing left? Yeah. That.

So I like having things around that still scratch that crunchy, salty itch but bring a little more to the table. Chickpeas give me some protein and fiber, and making the ranch seasoning myself means I can adjust it however I want.

And honestly, that’s how I want most of the food around my table to be. Nothing complicated. Nothing pretending to be something it isn’t. Just simple food that tastes good and makes it a little easier to make choices I feel good about.

Make a batch, let them get nice and crispy, and try not to eat half of them straight off the pan. 😂

Happy snacking!
