Homemade healthy banana oat muffins with golden-brown tops, served alongside ripe bananas, rolled oats, and honey on a kitchen counter.

Why You'll Love These Healthy Banana Oat Muffins

Some mornings, you just need something you can grab on your way out the door. And if it's homemade, delicious, and made with ingredients you probably already have in your kitchen? Even better!

These healthy banana oat muffins are naturally sweetened with ripe bananas and a little maple syrup or honey. The oats add heartiness, while Greek yogurt helps keep the muffins soft and moist.

They're easy to make, don't require a mixer, and are a great way to use those bananas that have gotten a little too ripe on the counter.

Make a batch at the beginning of the week, and you've got a quick breakfast or snack ready whenever you need one.

Prep Time: 10 minutes

Cook Time: 18–22 minutes

Total Time: 28–32 minutes

Servings: 12 muffins

Ingredients

  • 2 ripe bananas, mashed (about 1 cup)

  • 2 large eggs

  • ½ cup plain Greek yogurt

  • ¼ cup pure maple syrup or honey

  • 1 teaspoon vanilla extract

  • 1½ cups oat flour (or rolled oats blended into a fine flour)

  • ½ cup old-fashioned rolled oats

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon salt

  • Optional: ⅓ cup mini chocolate chips or chopped walnuts

Instructions

  1. Preheat the oven to 350°F. Line a 12-cup muffin pan with paper liners or lightly grease each cup.

  2. In a large mixing bowl, mash the ripe bananas until mostly smooth.

  3. Add the eggs, Greek yogurt, maple syrup or honey, and vanilla extract. Whisk until well combined.

  4. Add the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.

  5. Gently stir until everything is combined. Avoid overmixing the batter.

  6. If you're adding chocolate chips or chopped walnuts, fold them in now.

  7. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.

  8. Bake for 18–22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.

  9. Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack.

  10. Enjoy warm, or let them cool completely before storing for later.

Tips & Variations

  • Chocolate Chip Banana: Fold in ⅓ cup mini chocolate chips for a little extra sweetness. Because sometimes chocolate makes breakfast better. 😂

  • Banana Nut: Add ⅓ cup chopped walnuts or pecans for extra crunch.

  • Blueberry Banana: Gently fold in ½ cup fresh blueberries for a fruity twist.

  • Extra Cinnamon: Sprinkle a little cinnamon over the tops before baking for more warm, cozy flavor.

  • Make Your Own Oat Flour: Blend old-fashioned rolled oats in a blender or food processor until finely ground.

  • Use Really Ripe Bananas: The more brown spots, the sweeter your bananas will be.

  • Don't Overmix: Stir just until the ingredients come together to help keep the muffins tender.

  • For a More Filling Breakfast: Pair a muffin with Greek yogurt, cottage cheese, or eggs for additional protein.

Storage

Refrigerator: Allow the muffins to cool completely, then store them in an airtight container in the refrigerator for up to 4 days.

Freezer: Once completely cooled, place the muffins in a freezer-safe bag or container. Freeze for up to 3 months for best quality.

To Reheat: Microwave a refrigerated muffin for about 10–15 seconds or until warmed through. Frozen muffins can be thawed overnight in the refrigerator or warmed in short microwave intervals until heated through.

Around My Table…

I don't know about you, but somehow I always end up with a couple of bananas sitting on the counter that nobody wants to eat anymore. 😂

And honestly, those are the best bananas for baking!

I love recipes that don't require a bunch of complicated ingredients or a sink full of dishes. Especially when I can make something once and enjoy it for the next few days.

These banana oat muffins are the kind of breakfast I love having on hand. Something simple, a little sweet, and easy to grab with my morning coffee.

And if I'm being completely honest, I'm probably going to throw a few chocolate chips into mine. Because healthy eating doesn't have to mean giving up all the little things you enjoy. 💗

Around my table, I'm all about finding that balance—making choices that help me feel good without making food complicated.

So the next time those bananas start looking a little too ripe, don't toss them. Turn them into something delicious!

Happy baking!
