Ingredients
3 pounds chuck roast
2 tablespoons taco seasoning
2 cups low-sodium vegetable broth
Instructions
Trim any excess fat from the chuck roast if desired.
Rub the taco seasoning evenly over all sides of the roast.
Place the roast into the slow cooker.
Pour the vegetable broth around the roast.
Cover and cook on Low for 8 hours or High for 5 hours, until the beef easily shreds with a fork.
Remove the roast and shred using two forks.
Return the shredded beef to the slow cooker and stir into the cooking juices.
Serve immediately or store for later meals.
