This easy healthy chicken salad is one of those meals for me. It's quick to make, keeps well in the refrigerator, and makes lunch incredibly easy during busy weeks. I love that it's packed with protein and crunchy vegetables while still tasting creamy and satisfying.
One of my favorite things about this recipe is how flexible it is. Most of the time I keep it classic, but when I'm craving something a little sweeter, I'll toss in a handful of dried cranberries for a delicious twist.

Ingredients
3 cups cooked shredded chicken
3 hard-boiled eggs, chopped
2 celery stalks, diced
¼ cup chopped dill pickles
¼ cup sliced green olives
¼ cup mayonnaise
¼ cup plain Greek yogurt
Salt and pepper, to taste
Optional Mix-Ins
¼ cup dried cranberries
Chopped pecans or walnuts
Fresh dill
Dijon mustard
Green onions
Instructions
Add the shredded chicken, chopped eggs, celery, pickles, and olives to a large mixing bowl.
In a small bowl, whisk together the mayonnaise and Greek yogurt until smooth.
Pour the dressing over the chicken mixture and stir until everything is evenly coated.
Season with salt and pepper to taste.
If using dried cranberries or any other optional mix-ins, gently fold them in.
Refrigerate for at least 30 minutes before serving for the best flavor.
